But bread baking goes even further. Bread is the ultimate transformational food. Its ingredients are not only radically changed from one thing into something completely different, but more significantly, and unlike any other food, bread actually goes through two transformations in its journey from the earth to the table. Let me explain. To make bread we harvest the caryopsis (the seed) from living grass, taking the life of that grass. Usually but not exclusively, that grass is wheat. Then we grind the seed into flour, taking even its potential for future life.
In the context of bread, it means to weigh or measure the ingredients (bakers call this scaling), read the instructions, and get organized both externally and internally. I consider it the single most important of the stages because without organization and correct scaling, the chances of success are greatly reduced. The basic tools for bread making (counterclockwise from left): strong mixing spoon, instant read food thermometers (dial or digital), rubber spatulas, plastic bowl scraper, lame (scoring blade), electronic scale, stand mixer hook and paddle attachments, water mister, and metal pastry bench blade.
Although we often think of gluten as the protein in wheat flour, it does not actually exist in wheat; it develops later, when flour is hydrated and gliadin and glutenin bond together to make the longer, stronger protein we call gluten. Albumin and globulin are water soluble, that is, they dissolve in water. But glutenin (a longchain protein) and gliadin (a globular short-chain protein), as well as the gluten that they eventually make, are not water soluble. Rather than dissolving in water, they form a colloidal suspension, in which the protein molecules are somewhat dispersed but also somewhat organized due to the influence of many factors, including electrostatic charges.
